Hi Sandy,
The plugin does not normally change the content of existing posts, or update the content when it is installed. So it won’t rewrite existing links into shortcodes [amazon ...].
However there is a Beta plugin that will search for and replace existing links and automatically turn them into shortcodes. Currently it only supports standard <a href="www.amazon... /ASIN/">Some Text</a> links.
When you uninstall the plugin you can run the same Beta plugin to convert the shortcodes back to links (static content). When this is done it will convert the links to the default country’s domain.
I can’t guarantee the plugin will convert the links back to their original form exactly.
If you do use the Beta plugin, I would recommend backing up all you posts. It IS doing a search and replace, if it gets it wrong it could screw up some of your posts.
The Beta plugin does have a test option so you can see what it finds and what it will replace it with.

To be clear, after I install the Amazon Link plugin, only new amazon links that I add using the Amazon Link plugin can redirect users to their local amazon store (assuming I set it up properly). Existing amazon links on my site will remain untouched. – Is this correct?

Yes this is correct.
The Beta plugin comes with the Amazon Link plugin, but it needs an additional step to install & activate. However I discovered that it is out of date and needs updating, so I’ll have to release another version of the plugin shortly.
