Variation stock is set on a per variation level: Think of t-shirt as an example – You’ll have 1 Red Shirt, 1 Blue Shirt and 1 Green Shirt. If someone buys the red shirt, you’ll still have two other colours of that shirt even when the Red shirt is out of stock.
In the same vein, If you’ve got “Room” as your base product and “Per Person Sharing” as your variable, then buy one variable doesn’t mean the other variables are removed.
When it comes to room booking, have you considered using a dedicated add-on for that? There’s a few available although Woo does have one available as well. It’s called WooCommerce Bookings and works alongside WooCommerce Accommodation Bookings

Thankyou for your reply, i have all of the plugins you have mention above installed currently. The issue i have is the complexity of the rooms my client is offering.
So they offer 1-9 rooms in a Villa, each room has its own price dependant on many people are staying in that particular room.
An example, Room 1 for 1 person is say £1000 for 6 days and for two people say its £700 per person for 6 days and say 3 people for the is £600 per person.
Maybe its me getting confused but i can’t seem to translate into the plugins above to work smoothly and on top of that some retreats take deposits to make it even more complicated.
I have it all setup under variables but cannot group them together so it getting very confusing.
