is that a good idea to have FB WooCommerce Plugin connected and Pixel connected at the same time and both granted adding/removing permission in FB data sources?

That’s a great question! As the plugin allows you to install Facebook Pixel, I don’t think there should be any issues.

If you’re using a different plugin to set up Facebook Pixel, then I think there might be a conflict between the two plugins that might cause problems.
