1) I’m not aware of any issues with Bricks Builder. If this tool uses custom solutions for services like Youtube etc, some customisation might be needed.

also I heard it writes meta fields throughout your database. I had also heard the it was quite resource heavy (on memory I think) ?? Any clearance on that?

Main reason for not answering premium related questions is a forum guideline, as this for free specifically, as a forum for contributors in WordPress.
Discussing commercial products is not per the guideline,
For #2. As this is not directly related to premium, you don’t necessarily need a multisite plugin for multisite. If allows for multisite features, but for just 2 domains, you can opt for a single site solution.
For #3. We’re running Complianz on all our (high traffic) websites, with everything enabled; https://snipboard.io/CNitR1.jpg
Pagespeed is rarely an issue of just one plugin or service. When everything is structured correctly, and optimisations are in place you can add another service with minimal effect. I’m sure, like Complianz, Cookiebot optimised their service to require minimal resources. In contrast Complianz is fully loaded locally, whereby Cookiebot might depend on another service, which decreases some control.
