In Postie how do we specify the from email when Postie sends a Post confirmation sender notification to the poster’s email?

Postie uses the wp_mail() function to send the confirmation emails. You can read about that function here: https://developer.wordpress.org/reference/functions/wp_mail/

You can use the “wp_mail_from” filter to change who the mail is from.
