I would like my bar to show percent completed followed by in-progress with the in-progress being in a different color.

That’s not possible right now (I mean, it might be possible with a really complex custom text progress bar with html/css built into the custom text) but pull requests are welcome on the GitHub repository if you are interested in contributing some code.
