The Gallery Post Format, as seen on my demo site, is simply using the standard WordPress Gallery.

I mean like Customizr theme in their showcase page.
or something like this.
If you want to display a jQuery gallery like those, you’ll need to write some custom code or find a plugin that suits your purpose.

Have a look at the Easy Media Gallery. I hven’t used it so have no idea what it’s like, but it appears to do what you want.
If it doesn’t, then you’ll simply need to perform some searches through the Plugin Directory.
