There are two different situations.

1. The buyer makes the payment and the money is credited to my paypal account but the order status is Order Status: Processing

2 buyer makes the whole buying process, payment is not credited to my account paypal and status is Order Status: Processing.

In my paypal account I set the IPN as follows:

IPN URL: http: // my-domain .com

In your site, payment status processing or completed, as soon as someone pay using paypal, you should receive the payment in paypal.
To receive IP properly you need to enable message delivery ( https://www.evernote.com/l/AV3AR5LFdAJKHZ7GNILssW28TOJBy4B9T4AB/image.png ). Still sometimes there could be some delays in receiving IPN due to your server reach-ability from paypal.
