Please be sure to only put an email address in that setting field – anything else will fail to validate and will automatically be removed. That is, you can do things like
donations@mynonprofitsdomain.org
and that should work – but no links etc – they will fail to validate and will be rejected.

Yeah, I only put an email address in that field…no links. Not the problem.
Should I delete the plug in and reload it? I would hate to have to use something else because I like the layout of this one, but I have spent way to much time trying to fix this issue.

Please try this: please try deactivating, then deleting, and then install and activate the plugin again – let me know if this makes it so you can set the email address. You will not lose any settings.
I saw one other user get half upgraded when they attempted to update to the latest seamless donations – and I’m wondering if that is what has happened here as well. I think there might be a bug in plugin update in WordPress core – not sure.
If you still can’t get the email address to “stick” after doing all that, please send me a screensnap of the settings page with the email address BEFORE you attempt to save the settings changes and a screensnap of the settings page after you attempt to save the settings changes.
