Hi there,
This sounds like your server is caving under the load or there is a plugin creating a fatal error.
WooCommerce also to log any fatal errors. You can find these under WooCommerce > Status >> Logs (click on the tab). After clicking on the logs tab examine the dropdown on the right for any “fatal-errors” entry. If there is one, provide its contents here and we can take a look.

Hi thanks for your reply, see the below – this is the fatal error log coming up:

It looks like those errors are pointing to an issue with the theme being used on your site.
I would recommend checking for any updates for your theme or you will want to either contact the theme’s developer or update the templates following the instructions here:
