On hold per product

    Hey,
    We sell via stripe as our sole merchant. About 20% of the time payments must be captured and held until they are ready for dispatch (ie, we process them manually).

    The rest of the time (ie, 80% of our products) we need to process payments immediately for.

    The problem is in settings for stripe it only offers capture charge immediately for the entire store.

    Is there some way (or any docs for customising you can point me to) where I can capture charge immediately for some products and not for others?
