Could you please share the content of both your Form and Message body content (within Mail tab) to try to help you?
Maybe you forgot to put the mail tag equivalent to the form tag for your international phone number.
For example, if you have a form tag like this:
[intl_tel your-phone]
You should to put this mail tag to print the input of the submitter in your mail:
[your-phone]
