A partial post seems odd. It is possible to run out of memory but you would get no post, not a partial.
You might try clearing “Text for Message End” and/or turning off “ Drop The Signature From Mail”

There was nothing in the “Text for Message End” field and “Drop The Signature From Mail” was already set to Yes.
The email was truncated from 1.6 MB to 856KB. It originally had 24478 lines and the part forwarded only had 13425 lines, meaning 11053 lines were truncated. The original email had 1,565,701 characters, while the truncated post had 846,978 characters.
Might this possibly have something to do with the implementation of IMAP on either WordPress or the plugin. That is, might this limitation be built into the software?
Try changing “Drop The Signature From Mail” to no.

Is there a short explanation why that worked?
Signature removal just looks for sequences of characters that typically indicate the signature block at the end of an email. However, there is nothing special about the typical “start of signature” characters other than convention.
