Are you using a plugin to translate your site? You should be able to change that from your string translations.

You can use a plugin like this to translate your site: https://wordpress.org/plugins/loco-translate/
You can give your posts custom post excerpts from the individual post edit pages. If you do not see the Excerpt tab you may need to select it from the screen options tab on the top right of the page.

Also can you clarify which string isn’t translating? Many use loco translate without issues and I’ve tested quite a bit too.

From my understanding you would either have to translate the theme using the po file or edit the theme files. For latest posts read more you will need to edit the file: virtue/templates/home/blog-home.php line 74. You should use a child theme to do this.
Just to note, the premium version has a built in option to change this text.
