Thanks for reaching out to us. The way you want to set up your site is not that much difficult. As you just want the students to login and register you will just need to have the student registration set up. Now as you will be taking the money off line. You will have to set the payment method in woocommerce as cash on delivery. If you go to woocommerce settings > payment option http://prntscr.com/urfwip you will find this. After setting this up. Set the course price and sell it offline and when you receive the order make the order status completed. Then only will the students be able to enroll. Before that it will not be possible for them to enroll if you set a price for the course. When a price is set for the course a student cannot enroll until they make the order and the order status is completed. I hope this is clear.
