The checkout flow gets carried out by WooCommerce, hence the payment option will be added by admin via WooCommerce >> Settings >> Payment.
Just to keep you posted, we are working on split order flow, means each vendor will have their own order number. Then you can add this flow on your site by doing custom code, i.e. vendor can set the payment method for their order.

Just one additional question concerning the order flow split. Right now there is for instance paypal installed via WooCommerce. Which means all payments go through this account, no matter which vendor sells.
Would it be possible with the order split func that each vendor could connect directly it’s own paypal account?
The same question concerning shipping. Can vendors choose their desired shipping methods individually? Because we will have vendors who offers shipping and pick up in the shop locations, others just want one of those options.

Hello there,
does that mean we’ll have to deviate the payment method via code ourselfes (int relation to the order no. series) or will we be able to assign certain payment methods to the relating vendor via the UI?
If I may ask for a clear answer regarding the following situation:
A vendor may accept PayPal, BACS, and POS/Cash. How will the Vendor be able to add his PayPal email address or BACS information as a payment method?

Once the customer will submit an order, our split order will just create a separate order number for each vendor and will show their respective orders. Hence, the payment method for customers will be depended on the payment set up via WooComerce. So, customer end payment options are not controlled by what payment option vendor has set for themselves.
However, if you use WCMp Stripe Marketplace (https://wc-marketplace.com/product/wcmp-stripe-marketplace/), then the customer will pay via this stripe and admin, the vendor will be paid instantly.
