Is there a way to include data such as “Date enrolled” which I am thinking will be a custom field during a user list import?

You can add a “Date enrolled” meta_key field to your User import file.

For example the “WP Import Export Lite” plugin supports formats:
csv, xls, xlsx, json, txt, ods and xml
