You can have the featured image show by selecting the option in the post settings > post summary.
As for the category page just don’t link to it if you don’t want it. Just remove the link from your menu.
If you want a page that shows a category and shows the full posts then create a blog post page with the page template: http://docs.kadencethemes.com/virtue/#blogpage

I’m not sure I understand the question? No where in the theme are you forced to add a subtitle, it’s an option on pages if you want to use it.
