Update to this question. Do I need to have a paid version in order to add categories?
Ok, well nevermind. I just got another plugin and it all works perfectly.

Ok let me help you. It is a complicated process and take a long time to add pictures in the categories.
1 – Create your categories in Photo Gallery
2 – Click on Add New
3 – Add a title example wedding 1
4 – on the right of the window you will see Gallery Categories, tick the category that you want the picture to show on.
5 – Below this box you will see Featured Image, click on the add Image and add your image you want to show in that category.
6 – Save and check to see if this categories shows on your page.
It is a long process as you have to add one photo at a time.

For anyone trying to create categories for the menu, I just figured it out.
Go to the Gallery Ape plugin and select “New Gallery” from the menu.
Add images by going to the green button “Gallery Resources” at the top right of the page.
Add a title and for the gallery. (This will be the first category name for your gallery menu.)
Set the style preferences.
On right column there’s a section called Page Attributes. Select “(no parent)” meaning this will be the main gallery.
Click Publish
Go to the top of the page and click “new gallery”
Add images, title, and this time on the page attributes select the title of the first gallery you made.
Click Publish
Repeat to add more categories to the menu.
