how to change the language

Are you simply trying to change the language in the admin from English to Spanish?

You need to first download your Spanish language files from http://i18n.svn.wordpress.org/

These will be placed inside your /wp-content/languages folder. Then you need to define the language in your wp-config.php file, eg:

define ('WPLANG', 'es_ES');
