How does the “Remove Personal Data”-Setting work?

Good afternoon,
I am curious what the setting “Remove personal data from applcations including resume.” does. When I click the Checkbox all the informations will be still shown in the Applicants-tab. Our company would like that the sent application-forms go directly to HR via mail (which can be achieved by the “Email Attachment” Add-on I think) and will be deleted immediately from the Applicants-tab. The goal is that IT-Administrators should not be able to view applications. I am not sure if that option is what I’m thinking or if there is another way how to get this working.
