How do I exclude a category from Featured posts

I have a few questions actually.
1. I’m trying to figure out how to exclude a category from the featured posts area (the slider) the only option seems to be posting all of them or one just one and no excludes. The standard blog area has more control. And if possible i’d like excludes on the latest posts selection as well.
2. Is there anyway to change the default image sizes? The 720X340 is an odd size to work with and id prefer it if it could be a little taller.
3. How do I add a time stamp to the posts, and on the front page of the posts. Currently I only see a date stamp.

I watched both of those and do use the inspect element when I can however, it won’t aid in fixing any of the problems I asked about. I can’t find the files that redefine the default image sizes so I can adjust them. The inspector doesn’t display that. It doesn’t help me exclude categories from the slider menu and it doesn’t show me how to add a time stamp. Please read my questions next time, thank you.
