I’d recommend directing that question to the developer of the plugin that you’re using to hide the swatches.
Woocommerce is hiding it not the plugin. The plugin only changes style not how it works

I can confirm that WooCommerce doesn’t hide other variations when a variation is selected. So it’s either your theme or the plugin that is hiding the unselected variations.
