Hide category

Hi! I need to hide an entire category and sub-category. I dont want to delete the products, just hide them all.
The proposit is to hide the cartegory Apple because I’m not going to sell apples since february, then in february I will activate it again.
May I can hide/show categories based on user roles? Only admin can see it…
How can I do it?
