Hi @josiah-s-carberry,
If this unhappy event was caused by some misconfiguration on my side (as opposed to a bug), please let me know.
I assume this is more because of a component you have running in addition to WooCommerce. How do I reproduce this? Have the option checked or unchecked?
And then update from the WP admin or by another method?
Are you really saying that some plugin other than WooCommerce is changing an option value for WooCommerce, but ONLY when I upgrade WooCommerce???
The value of the option must be True – allow guests to buy things. After upgrade, this option is set to False, which essentially makes the ecommerce part of the site useless.
The updating of the plugin is done via wp-admin interface.

That’s certainly a possibility. I’ve tested this on a couple of sites of my own, and I haven’t been able to reproduce.
On a standard setup, using the Storefront theme and with only WooCommerce activated, I wasn’t able to reproduce the issue. Updating the WooCommerce plugin from 3.5.3 to 3.5.4 did not change any settings – including the guest checkout one.
For cases like this, I’d recommend testing updates on a staging website first – to make sure no major issues happen after the update.
