gravity forms post

I am trying to use this plugin to post form data to a custom php page, so I can gather the data and then submit it to freshdesk via there API.

from my old forms I was sending it over as a post action so I could gather the field as a $email = $_POST[‘EmailAddress’];

Can I use the same method for this plugin?
