Hi,
The first thing I would like to do is determine whether another plugin/theme is misbehaving resulting in DG being unable to function correctly. To test this, you’ll need to do the following:
1. Disable all plugins except for DG.
2. Switch to a default theme for your WP install.
3. Try to create a Document Gallery again.
4. If three, succeeds, then enable plugins and switch back to your theme one-by-one, each time re-trying #3. When 3 fails for the first time, you know what is causing problems.
If 3 does not succeed at any point, then it likely is an issue specifically with DG and I can investigate further.

I have tried the suggestion from a week ago, and it seems to be working fine now. (Yay!) I have tried reinstalling the plugins, and all still seems to be working. Thank you so much for your help, Dan!!
Well, I tried it on another of our WordPress sites to see if it would work there as well. I uninstalled the same plugins that I had before to see if it would let me use the Document Gallery. It would not let me use it. I did not want to move to a default theme since the theme I use is very in depth and I have a great deal of work and information already in it. It would not let me use the document gallery. I then tried it in a third site using the same theme as the second (that wouldn’t let me add it). It works fine on this site with the theme replicated. Any ideas??

Curious indeed.
I still have to strongly recommend that you switch to a default theme (keep in mind this is a temporary test step). Especially you telling me that the theme is “very in depth” makes me anxious. If we can rule it out, that’s one more data point to maybe help narrow down what’s going wrong.
Other than above, can you tell me what browser and operating system you are running? If you try different browsers does anything change?
