Functions “GET_” of WordPress

Hello, I just wanted to know more about these WordPress functions. get_header (), get_footer () et cetera… (In templates for Wordrpess)

I know that your task is to call their respective files .php, but when WordPress creates these functions? because in the files is not, why not use include() of php? et cetera, et cetera…
