Is it possible to have the PDF open in full-screen mode by default?

It isn’t possible to open the viewer in the full-screen mode by default as this behaviour does require user input to initiate.
I think what might be useful to you would be creating a custom page template within your site’s theme. Creating a custom template would allow you to eliminate any sidebars, widgets, or other content that would normally be populated to the page.
