Also I see some of your screen shots shows Print and Email buttons at the bottom.
But on this demo there isnt.
is that changed on the Pro version AND can the Complete button also be put there.

Here is the information for each of your questions:
Variation Product – Our current live version 1.0.11 is only supporting 10 product variation items. Our new version releasing soon will support unlimited items for product variations.
Add Variation Cart Action – The behavior you described is the designed functionality of the POS. After a product, product variation or product add-on is added to the cart, the product view will reset to the Products All view.
Search by SKU – Right now, we are not supporting officially the ability to search by a SKU number. As a temporary solution, the Barcode search function can be used for searching SKUs that are number based for example: 2348023080432 or character based for example woo-hoodie, but SKUs with numbers and characters such as ShirtsWc1234 will not always work correctly due to Barcode type format requirements. On our development roadmap, we will provide official support for searching by SKU numbers.
Print/Email/Complete Buttons – In the last release, we changed the location of the Print, Email and Complete buttons. To optimize for a simple view and device screen size, we moved the functionalities to the cart menu button. We will update the screenshots to avoid visual confusion in our next release. To access the functionality, click the cart menu button. Once clicked, the menu will display the options. The Print option will only display if the free add-on Print Google Cloud Print GCP WooCommerce is activated. If not activated, you will only see the option for Email and Complete. The options of Print, Email or Complete only show once the order is placed. Prior to the order being placed, we provide the cart menu functionality: Add a Note, Add a Discount, Save Order and Delete Order.
