Form field values for email

I’m trying to add form field values to the email that gets submitted. In the documentation the animation shows the form’s fields when clicking on the “Add dynamic data” button next to Field Data. Mine only shows {{all_data}} and {{undefined}}, I don’t see any of my form fields. If I manually add a field to the email using the field ID as {{Field ID}} then it doesn’t actually show the value of the field but it just shows {{Field ID}} in the email.

This is on a multi-step form.
