Is there a shortcode that would display the same layout as the event page and also perhaps limit the number of diaplays to 1?

I tried my own here:

[eo_events ]
<div>%event_thumbnail%</div>
<div><h1>%event_title_attr%</h1>%event_content%</div>
[/eo_events]

but not looking like I need.

The shortcode allows you to limit the number of events (see docs).

You can also provide a custom template for the shortcode if you do not want a ‘list’. (See this page for details on templating)

Aside from that its possible to create your own page template, making use of the available API. This is probably the best way of achieving this.
