You can already roll to any TAG that is hosted on wordpress.org You can even select the version you already have installed and it will re-install the current version.
This means you could have a BETA version that normal users wouldn’t be able to access that you could roll FORWARD to for testing purposes.

In our case, that’s the current version. So you can definitely do that. But some developers use trunk in different ways. But the bottom line is that if there’s a TAG, WP-Rollback supports it.
