I know the free version has a venue map, and the pro version has an event map where you can have pointers for all your events. What would the map look like if you had European events as well as U.S. events? Could the map be set to show both?

Yes, by default the map would be zoomed and centered to show all appropriate events.

However you can also specify a center and zoom level.

The events map shortcode accepts all attributes supported by [eo_events] and all attributes supported by [eo_venue_map]. Further details can be found here: docs.wp-event-organiser.com/shortcodes/events-map.
