Are you using any caching plugins on the checkout page?
Can you please disable all other plugins to see if the issue persists?
If it does not, then re-enable them one by one to see when the notice appears.

Turning off and flushing the cache of both caching plugins I am using makes no difference. Nor does disabling all plugins but WooCommerce. I have filed a support ticket.
Worthwhile mentioning is that this PHP notice started showing after I updated the Mollie plugin to the latest release.
For now I have ‘solved’ the issue by disabling the PHP messages in my wp-config.php

Our developers have identified the issue and fixed it for our next release.
In the meantime you can either downgrade to PHP 7.3 or suppress PHP notices with your wp-config.
