We have not yet heard similar cases. Could you deactivate all the Events Calendar extensions if you have them? If possible, also other plugins to rule out code conflicts.

I created a staging site to rule out other plugins for code conflicts.
Within the staging site, I haven’t changed anything yet (deactivating a plugin or changing a setting etc.), I decided to create a new event to check if I would encounter the similar issue, but I didn’t.
The “end” dates that I assign to the events would properly save.
The issue only happens on the main/prod website.

If you haven’t made any changes to the code, could you completely remove the plugin and reinstall it? Don’t worry, the events are not deleted. This can correct issues as a first step.
