Using Postie to embed a YouTube works great. Looking at the page’s source code in the browser, I can see Postie is creating a good YouTube iframe. However, this doesn’t work for embedding a Twitch video — it only shows up as a link. The link works fine, but I’d like readers to be able to watch the video in my blog and not have to go to Twitch to see it. Is that possible? I played with the video templates, but without success.

Postie uses the WordPress supplied oEmbed service which has support for a specific list of sites. See https://wordpress.org/support/article/embeds/#okay-so-what-sites-can-i-embed-from

Twitch is not on the list, and although there is a request to add it there seem to be some challenges.

I’d suggest using a Twitch plugin and add the shortcode to your email.
