Is there a way I can get an email any time someone updates their profile? Has anyone done this before?

The plugin does not natively do this at this time.

The Advanced Options extension that is available to premium support subscribers does have this as a setting. Also, the premium support site does have a tutorial in the code snippet library on how to set this up as a customization.
