Its very nice to hear that Ggogle finally pics up last modified info from your website. I think you are using Compatibility Mode in Schema Settings. Am I right?
Please use custom Description for posts using any SEO plugin. You can get this option from posts edit screen. Otherwise use after content or shortcode method as before content method adds last modified info on posts start paragraph and google will fetch this as description as there was no custom seo description.

Anyway, as I understand it you are saying that because I am using the “before content” method inside posts that Google is scraping those words. I didn’t realize that. If that is the case then could I just disable schema?
I ask because I’d rather not move the output to the bottom of my posts or use a short-code. So what is another solution? Thank you!

Sorry for the late reply.
Yes you can do it, but I do not suggust to do that as this this the simple text: “Last Updated on November 15, 2018” and Google shows it as meta description. I recommend you to use JSON-LD Schema Markup as Default Mode, otherwise if you are using any other SEO plugin like Yoast, Rank Math etc. then the Compatibility mode is the best solution for you.
