You can adjust this by exporting all the products into a CSV file, then adjusting the download expiry in the CSV, then importing all the products again. You can use the default import/export feature included in WooCommerce core: https://woocommerce.com/document/product-csv-importer-exporter/

If you’d like to remove the value, you can enter '-1 in the download expiry days column.

The above should only update the download expiry days. If you are concerned, you can create a staging site using a plugin called WP Staging, and test-update products on that environment first.
