It means your site WP Core won’t be updated to major releases.
Major releases are releases that have additional features, UI overhaul, compatibility change, etc
For example, WP 3.0 had introduced Nav Menus and 4.0 had introduced Grid Views for media, plugins, etc

Minor releases are revisions, bug fixes, etc
If you disable, you will not be notified. However, you can create another admin and exclude him from settings. So that he can view and manage any updates regardless of how you set Easy Updates manager settings.

In fact, what I want to know if there is a way to disable all automatic and background updates but be notified when such updates are available. That way, I can do a site backup before proceeding to any update and take the risk to brake my site.
Is there a way to do that wiht Easy Updates Manager ?

At this moment there is no such feature to email notify available updates. But you can use our UpdraftPlus backup plugin to take a automatic update before updating site.
