One of the fields in my form is an file upload so as you can imagine that’s filling the database up pretty quickly.

Is there any way to delete a specific column/field in the DB or is it a case of going into phpMyAdmin and locating the PPu66B_cf7dbplugin_submits row, finding all submits with the field name in and delete?

If I did that it won’t then mess up anything else will it?

If you purchase the CFDB Editor extension then you can delete a column from the dashboard view.

In lieu of that, you would need to go into the DB and delete rows containing that field:
delete from PPu66B_cf7dbplugin_submits where form_name = 'your form name' and field_name = 'your file upload field name'
