This is a functionality that should be provided by a theme. The view would differ depending on the page. Which theme do you use?
Correct, the view does differ depending on page. However, I’m using two separate categories as pages, and so because they are not listed in ‘Pages’, I do not have these customisation options. They are simply automatically built pages that refer to specific categories from my blog.
I am using GeneratePress
At the GeneratePress support in this Topic
https://generatepress.com/forums/topic/create-a-custom-sidebar-for-archives-pages/
to the topic this plugin is recommended here:

Try it with it. If you have any questions, I would recommend GeneratePress support as the use of such a plugin depends on their theme support.
Thanks for your help. The problem with this is that whilst I can alter the sidebars according to category, I cannot make the sidebar area disappear on the category page where I do not want it. Is there an easy way to do this?
What does GeneratePress support have to say about this? I had recommended you to contact them.
They have a premium option that allows you to do it, but I can’t afford that
