Currently, adding categories to course permalinks isn’t available. Regarding the “transliterate title if it is not Latin,” could you clarify what you mean?

well, Mohammad – it’s pretty simple, there are alphabets other than Latin and course name can be in that alphabet.
If one don’t want non-latin characters into slug one makes substitution (usually by similar sounding) it is called transliteration.
We expected this functionality to be included into Tutor.
