Sorry to hear! I have seen a couple issues with Gutenberg + other page builder plugins, so it might be a script issue. If you’re still using the shortcodes vs. adding Gutenberg blocks it’s the same code there apart from including the block in the Gutenberg error.
Are you seeing any script errors? Instructions to see them on most browsers under Step 3 here:

Ideally it would be good to see a site with your set up enabled and see the errors first hand. It may be a conflict with plugins that have Gutenberg blocks with your theme and Visual Composer, but hoping it’s something that could be handled within this plugin.

I tried to enable the plugin and debug like you suggested, and here’s the result:

could be an autoptimize problem; try disabling Autoptimize on a per-request basis by adding ?ao_noptimize=1 to the URL.
if the problem is not there at that point, some autoptimize (re-)configuration might be needed to fix this. there are troubleshooting tips and info on how to exclude in the AO FAQ.

I’ll look into the FAQ URL you sent me!
I checked the “Also aggregate inline JS?” option, and now things look ok. I’ll keep an eye on it for a while, and hope this was what I needed.
that probably works indeed, but could cause your cache size to go up quickly. the alternative could be not aggregating inline JS and then excluding gutenberg JS (wp-includes/js/dist) from being optimized.
