Gutenberg should definitely be stable before it becomes the default. The next phase for Gutenberg will be to include it as an opt-in (not default) and gather tons of feedback about it. There is also a plugin called Classic Editor that will allow you to override Gutenberg and continue to use the classic editor.
I joined the project recently to help test! This means I’m interested in details. The more testing and actionable feedback we get the better we can make the editor. May I ask what versions of WooCommerce and Gutenberg you tested with and what went wrong (if you have some time to share specifics)? I haven’t tested with WooCommerce yet but would be happy to take a look.

The team at WooCommerce worked hard on Gutenberg compatibility. They also have had a Milestone called Gutenberg in their repository.
