Yes, with premium extension Store & Service Hours you can set as many slots as you want for pickup. You can also set different slots for delivery. Limiting the number of pickups in a particular interval is also possible.

Ok great – Do I need an existing restaurant and food items in order to use this or can I set these options up within the plugin?
Not getting your question properly.
Thing is you need to install WooCommerce and Food Store plugin and setup up the settings for your store and food items. Above that this premium extension will be activated and it will show its own settings section that will work along with Food Store plugin.

A the moment I dont have the restaurant setup – do I need to install a restaurant theme that uses Woocommerce, setup the pages and menu items and then use your plugin to manage the collection side of things?

You need to do these things first, otherwise how were you suppose to test it. When you asked the question, we believed you have a proper setup and now you need some additional settings to enhance your store.

Is there a theme that you would recommend as working nicely with your plugin?
To test it initially you can use default theme “Storefront” which is recommended by WooCommerce.
Later you can browse some nice restaurant theme and use them and we’ll make sure that our plugin will adopt well with any theme you chose.
We use “Astra” theme for our demo.
