Love the plugin – does precisely what we want/need it to do. But because English defaults to a British flag, it looks awkward for US-based sites (where we also would prefer to replace the Spanish flag from Spain to Mexico to align with our usebase).

Even the US has to acknowledge that they are using the language of the British people 🙂
The flags are in the the folder assets/flags in the plugin and are 20×10 pixels.
So you could replace them, but if the plugin is updated, the flags will be overwritten.

Yes, I know I can replace them directly in the folder (and probably will) but if this could be configurable in an update it would be deal. Otherwise my changes will get wiped with auto-updates.

To do this properly, you have to take into account that languages in different countries are not the same. UK and US English are neither. Spanish is even more difficult. So if you provide US flag, translations should also consider the differences.

I have put it on the wish list, but it does not have a high priority.
