Category Widget Help

Hello,
WP will allow me to add as many category widgets as I want and when doing so the edit drop down even allows you to name the title of each category widget.

My question/need is how can I get specific categories to show up in these category widgets according to preference/relativity without ALL categories showing up in ALL the category widgets I create?
