Category or post archives list help?

I have “Blog pages show at most” set to 1 in Settings>Reading so my home page only shows latest post. But I also want an archive page that shows many posts. I put the Categories widget in the sidebar but clicking on that opens another page with only one post on it so I figure it is being controlled by the same >Reading setting. Is there a way to accomplish what I need?
